Our white sesame seeds come from Andhra Pradesh, where sesame, nuvvulu in Telugu, has been pressed for oil for generations. We press native-variety seeds raw, once, at low temperature, so the oil stays light and golden with a gentle nutty taste.
This is the nuvvula nune of Andhra kitchens: for pulihora, podis, pickles and everyday tadka.
